Recipe Friday: Dill Dip!

Well, I had planned to post a completely different recipe today. Had the post all ready to be posted at 11am this morning. Late last night, I cancelled it. If you follow my frequent updates on Facebook, you know that last evening I posted about craving dill and all the comments started about being pregnant. Oh. My. Word. If I am.....well, that is beside the point. I blame it on having made a cucumber dill dip the day before and devouring it. I went to check if I could scrape anymore of the dip from the sides of the container, but much to my dismay, I had already put it in the sink to be washed. Poo. So, I went on a scavenger hunt to find some dill weed in my local (non-Supercenter) Walmart, a Big Lots, and a $.99 cent store in order to make my own homemade recipe of dill dip (dill weed, sour cream, Worcestershire sauce and lemon juice perhaps?). Much to my disappointment, none of them carried dill weed. I'm thinking, COME ON! How hard can that be to carry DILL WEED?


I posted again today inquiring about where to find dill weed since it wasn't in my cheaper markets. I'm headed to Trader Joe's and Sprouts tonight to find some. I also figured that in lieu of making my own recipe and having it turn out like crap, that I'd search one out and adjust it to my taste.
Here is what I found! I plan on making it for dinner tonight, so I'll post an update and let you know how it tasted! If you try it, let us know how you like it!



Dill Vegetable Dip

Ingredients

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon finely chopped onion
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon dill weed
  • 1 teaspoon seasoned salt

Directions

Combine the first six ingredients; mix well. Cover and refrigerate


*Note: I plan to leave out the mayo, because I detest its flavor. I also plan to use 1 tablespoon of dried onion flakes instead of a fresh finely chopped onion.

Recipes Friday: Eggy Doodle Sandwiches

This recipe comes from my good friend Andrew. His source is Allrecipes.com. 
I can't wait to try this one with my stepson. He absolutely LOVES going out to eat to get an egg sandwich. The website for this recipe can be found here.
Makes 2 servings, but if you go to the site, it lets you adjust the servings accordingly.


Ingredients

2 tablespoons butter
  • 4 slices Texas toast thick-sliced bread
  • 4 eggs
  • 8 slices American cheese
  • 4 slices smoked ham
  • salt and pepper to taste

Directions

  1. Melt butter in a large skillet over medium heat. Cut a hole in the center of each slice of bread with a round cookie cutter or the rim of a glass. Place the bread into the hot skillet, crack one egg into the hole of each slice of bread, break the yolk and cook until the white is mostly opaque. Flip the slices of bread over. Form sandwich halves by topping each piece of bread with 1 slice of cheese, a slice of ham, then another slice of cheese. Season with salt and pepper and cook until the eggs are fully set; remove from the skillet.
  1. Make two sandwiches by putting together the halves. Place on a microwave-safe plate and microwave on high until the cheese is fully melted, 30 to 45 seconds.

*Side note:* I don't use a microwave (for one, we don't have one), so for step two, you can place the cheese on the eggs once the eggs are done and allow the cheese to just begin to melt before removing from the skillet. Then you can add the second piece of bread to make it a sandwich.
The review on the website says "It's like a fried egg sandwich on steroids! This sandwich has explosive layers of egg, cheese, and ham. Make this with your favorite meat and cheese, any combination will work. The Eggy Doodle makes a perfect snack or fast meal! Recipe Friday: Banana's Foster

So, I've not gotten too much feed back on the categories, but I decided to make Friday's my blog posting day. It's usually my meal planning day for the following week in my family, and it's the day that I will usually have the most down time in the evening.
I normally will not be posting foods that contain alcohol. I actually am hesitant to do so, but I figure, we're mature adults here and if you choose to use it, fine, if not, fine. Besides, most of the time the alcohol is boiled out of the liquid while cooking.
What better food to start with than a bananas foster dessert! Yummy!
I'm already breaking one of my rules here by not having tried it yet, but hey, we're moving this month and I've been craving sweets. Though I've not tried it, it sounds DELICIOUS! This recipe is from Crockpot.com's site, and you can find more details about it here.



Ingredients
12 bananas, cut into quarters
1 cup flaked coconut
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup dark corn syrup
2/3 cup butter, melted
2 teaspoons grated lemon peel
1/4 cup lemon juice
2 teaspoons rum
12 slices pound cake
1 quart vanilla ice cream

Preparation
Combine bananas and coconut in CROCK-POT® slow cooker.
Stir together cinnamon, salt, corn syrup, butter, lemon peel, lemon juice and rum in medium bowl. Pour over bananas. Cover; cook on LOW 1 to 2 hours.
Arrange bananas on pound cake slices. Top with ice cream and pour on warm sauce.

12 servings

The website also states that the slow cooker size should be around 5-5.5 quarts. I've found that anything larger will also do just fine, but anything smaller, you may have to adjust your serving size and amounts to the correct size of your crockpot.

Recipe Contributing!!

Well here we are just about 2 months after our wedding! The wedding was AMAZING! Everything went smoothly and there were only very minor glitches (florist sucked and cake was "baby shower pink" instead of hot pink).
A lot has happened since our one month-aversary! For those who I know personally, you have by now seen the news on Facebook that we are moving out of California and headed to Arizona. For privacy purposes, I'm not mentioning exactly where on here. We plan to move over the next month-ish. My husband got a wonderful job that we just could not pass up, and I'm working on getting required job certificates so I can begin the job hunt out there.
Also, I recently posted on Facebook about wanting to create or even changing this blog to a recipe sharing blog. I've recently discovered wonderful recipes thanks to friends and crock pot recipe books and other recipe books. Our current living situation prevents us from being able to do much other than the toaster over or crock pot, or our oven. When we move, I plan to have a counter top more than 3 cabinets long, therefore allowing for more cooking prep space. The response for starting one was great, so here's what I'd like to do. I've compiled a list of sections for recipes. When I post a recipe, I will tag it with whatever category or categories the said recipe applies to. I will also have a post dedicated to JUST the categories so that anyone contributing may reference for submitting their recipe. I am willing to accept recipes from others, but please know I'll have guidelines to follow in order for me to post them.
  • First, the recipe must include all ingredients and directions (this should be a given, but I've seen several that are "generic" amounts to pour into a recipe). Also, please include how many servings the recipe makes.
  • Second, please site your source. Where did you get your recipe? I will not post a recipe without it. If you got it online, please just say so. If your Cousin Bobbi Jo or your Babushka passed it to you, just say so.
  • Third, please list ALL categories in which you believe your recipe falls under. You will be able to find the post about that once I get it up. It will be a constantly updated running list.
  • Fourth, if you want to remain anonymous, just let me know, but please send me your name. I won't put your name in the post, but if I have questions, I can't just say "Dear Anonymous...."
  • It must be a recipe you have tried. I want to know how your family liked it when you submit it! That's part of the fun! If they liked it, say so! If they, or you, suggest something different, or paired it particularly well with a side dish, or added or took out something, I would like to include that in the post. (If you haven't noticed, a recipe submission here is kind of acting like a review for the rest of us!)
  • Last, if you submit a recipe, I have every right to accept it, deny it, alter it in any reasonable way, and I promise I will make every effort to notify you of what they are before I post those changes.
  • I also will not post a recipe received less than 3 days before the next post. I will post once per week, on a day still to be determined (probably Monday or Tuesday's)
The purpose for this recipe sharing is to collectively help each other's families find new, not yet tried, unique, one-of-a-kind recipes. For now, my request to you is to 1)please pass the word, and 2)leave a comment of a list of 5-8 categories YOU would like to see on my categories list. I will be adding them and defining them as we go!

10 days!

Well, it's incredibly hard to imagine that in just 10 days, we will be a family--we will officially become "The Shaffer's 3". I am blessed beyond words, excited beyond words, and scared outa my MIND!

The focus of this blog tonight was not to talk (some more) about the upcoming wedding. It was however to discuss the ever daunting task of meal planning. We will be on an incredibly tight budget upon returning from the wedding. I will have quit my job at Target to spend more time with my family, but I will be working as a baby-sitter/nanny nearby. My goal is to spend the rest of the month of April (we return April 16th) planning meals and saving whatever we need to in money for a 30-day meal preparation for May. I have two full weeks planned out (More on that later) and have two weeks remaining.

I have been doing some homework on the meal planning subject and have found two wonderful resources online.
The first one is Eat Your Books. You can sign up for free and in your virtual bookshelf, have up to 5 cookbooks at your fingertips. You can also sign up for a monthly or yearly subscription ($2.50/mo or $25 for a year) and receive unlimited books to your bookshelf. I chose the free one because honestly, right now, I'm not going to use much more than the time-saving, crock-pot, kid-friendly recipes, and while there are quite a few of those, I know I won't use more than five for now. That is the gist of what this website does. They also have some articles on there, but really, some of them are a little weird.
The second resource I found is Mel's Kitchen Cafe. It is exactly what I have been looking for: A recipe index by type (appetizer, main course chicken, main course beef, side dishes, desserts, drinks, you get the idea), recipe tools, menu's, and even an area for 30-day meals, or meals that you plan to freeze for up to a month or more. Probably my favorite tool would be the Online Grocery Shopping List. You can make more than one list at a time (I have one for each week), adding what you need for each week for your meals. Best of all, you can save them, delete them (although I'm trying to figure out how still), and create as many as you want/need. I love this website!! Best of all, it's free to sign up!! I've gotten so many recipe's from this site already and they seem very easy, not always quick, but something I could do on a day that I work half a day or have off.

Okay, on to my two weeks of meal planning. I would like to have the other two weeks done before we leave for our wedding adventures. I used Mel's website on this, and I'm still working on my grocery list, but that's mainly just for me. Also, something to consider, our schedule will vary from the next persons, and sometimes it varies by week, or even by day. For example: Every Monday, I have chorus rehearsal. So, that'll be typically be a "guys night" so it has to be simple. Every Sunday, we'll be driving 60 miles round trip for church, so I need a crock pot lunch. We don't have G-man Wed-Friday and most every other Saturday's, so meals can be a little more....fancy for just the two of us. Please tell me what you think. I get there are quite a few "repeats", but remember we are on an extremely tight budget.
Week one looks like this.

Tutoring services in the works....

So, after many frustrating scheduling conflicts with my current retail position, and the realization that I am STILL not utilizing my 4-year-turned-8-year college degree, I decided to do something about it!
As if I didn't have enough going on with our wedding just 38 (almost 37) days away, I decided to get started with a tutoring business. Thanks to Vista-Print, I have 250 business cards and a website to begin working on going live. Once it is live, you can bet that I will post it on here. My idea is that during the summer, kids "veg" in front of the TV, losing valuable time that could be spent keeping on top of their studies, or at least the knowledge they learned during the school year.
I'm going to post my prices and services on here, mainly for input, and if you feel I should modify them, just let me know how. I'm completely open because this hasn't officially taken off the ground yet.

K-5 grades tutoring available in all subjects: $30/hour
6-8 grades tutoring available in all subjects: $35/hour
9-12 grades tutoring available in most subjects: $40/hour
9-12 SAT/ACT 6 week boot camp (1 hour per day 3 days per week for 6 weeks) $150 (comes out to slightly more than $8/hr!)

The best family a bride could ask for

I love to brag--especially when it's about my family. This may be long, so please bear with me.
I will try to get through this without becoming a blubbering mess while typing this out!
I'll start with my Granddad. He has done beautiful work on our invitations--he has a God-given GIFT! We bought DIY invitations at Walmart because they were exactly what we wanted. My grandfather went to painstaking efforts to make sure everything was printed just perfectly, and was lined up and worded right, and just so. I must say, that no company could do as good as a job as he did. The invitations, the reply cards, the rsvp cards, and the direction cards AND the envelopes, AND the "S" monogram on the seal. He did them ALL. I'm beyond amazed, beyond impressed. 
My Mema and my Mimi. Both of my grandmothers have helped out in several ways. I couldn't ask God to bless me with better Grandparents than the 4 He gave me!
I even gotta brag on my sister in law Caitlin. She has already done so much for me with this wedding, including planning a second reception in Arkansas for us, and helping with designing the programs. She told me she wishes she were more my coordinator than a bridesmaid because she gets me--she gets what I want, and she does! But I also know she can write it out in plain English the complicated OCD/analytical thinking that goes on inside my head (scary isn't it?) of exactly what I want and how I want it for the wedding. She will ask questions and does NOT step on toes. I will tell her why I want something, she'll give her two cents worth, and I'll either change my mind or decide to keep things the way I want and she's not the least bit offended by it. That's awesome! She has become like a sister to me, and I love her for that! I LOVE that she is so on board with helping and willing to help, despite being in school, raising a 16 month old, and working. I could NOT do that if I wanted to. That has GOT to be hard! Thank you Caitlin!!
My dad has been amazing at being there over the phone to calm me down during various crises that I call him about. And boy have there been plenty! Everything from car issues, to work issues, to finances, to wedding, to siblings, to...you name it! He offers what he does best--his kind words. Some how, when he says something like "this too shall pass" or, "you'll get through this", I know he's right. If I start yelling in my ranting about whatever is going on, he is somehow able to calm me down. He's amazing at that. I don't know HOW he does it. Maybe all those years as a peer mediator manager or whatever they called it at the post office paid off...obviously he knows how to calm people down. He will suggest things that, had other people suggested them, I would have said, uh, NO. But when he suggests an idea for the wedding, it's almost like, oh, I didn't think about it like that. I love my dad. We butt heads A LOT, but I love him dearly, and I'm SO glad he's going to be walking me down the aisle! <3
My mom has been there for me through everything, including with this wedding planning process. She has stuck with me and supported my (albeit strange) ideas about the ceremony and reception details. If I didn't like something, she fought for me to have it changed or "not added", whatever it may be. She has listened to me complain, gripe, praise, and go on FOR EVER about various wedding or other topics. She wants the very best for me for the wedding, even though we can't afford "The Ritz", she has worked SO very hard to make it look like a million dollar wedding.
Recent example: When I go into a store on a mission for something, I usually find it, call my parents up and they say, okay, if that's what you want, see if they'll take a credit card over the phone. David's Bridal has been the common place as of late. Recently, I wanted to find my headpiece. I had NO IDEA what I was looking for in a headpiece--veil or no veil, tiara or no tiara, bird cage or not. I just didn't know. I called her with a few pictures I had sent via text and she just kept saying, those are nice, but didn't you say you wanted....X or Y or Z? Those don't seem to balance any of those qualities. So I waited to buy. I texted the pix to my bridesmaids, and some liked, but others were like, "meh...not really you." I later found out that my mom and Caitlin were talking and are going to do something special having to do with my mom's dress (I know what it is, I want to keep it a surprise). I wanted to CRY because my mom wants to do that for me! She is SO special to me and it means SO much that she would use her dress for something for my wedding day! God could NOT have blessed me with a better mother. She's become my best friend. <3
Last, and you better believe certainly NOT least, my "Mr. Wonderful", my fiance' Erik or as I will be affectionately calling him on this blog "MOTH" (Man of the House). Erik has been my rock through many trials, and we have talked them out together. Our biggest thing is that we DO communicate. Everything. I love how he makes me feel when I'm around him, I love how I can be me and not expected to be someone I'm not. I love that he isn't afraid to tell me no about something. He pushes me to be my best. I want to be my best for him. He has encouraged me to find a job related to education because it will get my foot in the door, but he has allowed me to at least search other options. He is an amazing father to his son--Gman, and I know that someday, he will show that same love for our children as well. I want to grow old with him. Go on Sweet Adeline International Chorus Contest TRIPS together. That includes setting up and taking down risers together! Spoil our grandchildren together. Go on old retired-people trips around the world together. Be buried next to him. Get to Heaven together, and work to make sure our children know about God's love and plan of salvation, and hope of Heaven. Together. If he is by my side, I will die a happy woman, of this I am sure.


Does my bragging appear as if I am spoiled? You bet! I'm spoiled by a God who loves me SO much that He has richly blessed me with a family that wants so much for me, and loves me unconditionally. I'm the luckiest girl in the world.

Wedding Checklist

So, according to TheKnot.com and our wedding website, we have just 84 days to go until our wedding. EIGHTY-FOUR (I spelled it out for emphasis). I can't believe it.
One year ago at this time, I was probably sitting in my apartment, probably lesson planning or grading, as was my life then, my then-pregnant best friend was probably over and we were probably watching Army Wives, or Drop Dead Diva or some other show that I had recorded on my DVR for us to watch over the weekend. I had the typical "woe is me who is without a love" and she had the normal "I'm craving...(fill in the blank, but it was usually rice crispy treats!).

I didn't know then what I do now about love, how it's not superficial. Being IN love with someone, completely and totally is not a love that is "surface" love. That kind of love is when you tell a close-friend-but-not-your-bestie-friend "love ya!" or the favorite ice cream flavor of Ben & Jerry's "ooooh I love that Cherry's Garcia flavor!" That's surface love. But deep, heartfelt, emotional love is being completely IN love with someone so much that, even if you didn't know them a year ago, you feel like....you feel like your life would be completely empty without them around. That the person was your missing puzzle piece to your life. That you can't imagine your life any different than being side-by-side. Completely 150% committed to them, to your bond, to your relationship, your life together. That, to me, is true love.


I firmly believe with all my heart that my grandfather had a hand in Erik and I...with later assistance from Erik's grandfather. I hear they were great friends, the two of them. We found out back in August that both of our grandfathers, along with a fella at church in Ontario, sang in the Pomona Valley Carousel Chorus (Barbershop of course!) together AND that my grandfather and his grandfather both stood side-by-side on the risers! For me to believe that they didn't have a hand in this would be absurd! We want to make sure we honor both of them on our wedding day. They are a part of both of us, they are a part of our lives, and we are who we are today because of them.

Woah, that was deep. That was not the point of this particular post.
Anywho, I wanted to share what The Knot has decided I need to do (apparently 102 things still, with 8 of them "overdue") before the big day. I'll spare you all 102 things and just talk about the things for 2-3 months beforehand.

Apparently we are supposed to "plan out the ceremony with your officiant and talk about any religious requirements (such as premarital counseling). I've been lectured, counseled, advised and the like by friends and relatives who SWEAR by premarital counseling. And that's GREAT! I do not discount that one bit. Honestly, if we could afford it, and if our officiant were in California, like we are, we WOULD. We have similar, but different plans that we have been working on for our marriage, such as the Dave Ramsey courses and such, and will be working toward being debt free. Please know that I'm not saying that we won't do premarital counseling, but if we can't do it, we can't do it.

"Finalize the menu and service details with the caterer." -->My mother and I are planning a special trip to Florida in February (woah, next month!) just for the little things like this! I'm SO excited about the caterer we are going with, he is SO accommodating and is giving lots of "complementary" items as being included! So, no, it probably won't be done exactly in that 2-3 month window, but it will be done. :)

"Shop for and purchase wedding bands"...yah, we've shopped...I found my favorite, he found his...just gotta get them now... :)

"Grooms: Get measured for your tux at the formalwear shop." If I could get the MOTH (man of the house) to actually DO THIS!? I've not pushed him to get it done and taken care of, I've just brought it up...probably once a month since November that I will need the measurements of all the men that will be ordering tux's...Sacino's is only in Tampa and for SOME REASON I had to pick a local shop...*rolls eyes at self*

"Having a bridal shower? A bachelorette party? Or a bachelor party? Talk to your maid of honor and best man about any prewedding party plans." Considering that my best friend is my MOH, I know I'll be in good hands....I'm a little worried about MOTH though b/c Gman is HIS best man...Gman is FIVE...he asked his dad if he could invite HIS friends...cute, but um, not quite the same party kid...sorry! :)

"Schedule your dress fittings and confirm delivery date for your wedding dress." Ummmmmmm....mine won't be delivered to the shop till AT LEAST January 27...(eek! CLOSE!) and then I'll hopefully be able to try it on when Mom and I are there in February...one fitting at the beginning of the week and hopefully (by the grace of the alterations lady) a second at the end of the week...that's it. Two fittings in one week to get it right...when you live across the country, ya just gotta go with it!!

"Finalize the ceremony song list and ceremony readings with your VIPs (very important extras)." That's a work in progress. Waiting to hear from one group because another group never got back to us, and then other music is being looked at...all just for the ceremony. Readings (and people) are picked out, just have to ask 'em now!

"Figure out ceremony readings and reach out to the people you want to play those roles"...umm, didn't we just go over this? CHECK!

"Brides: Give a bridal shower guest list to your bridesmaids." Considering I'm in California, one of my bridesmaids is in Texas, one is in Arkansas, and two are in Florida...I don't know exactly how this is going to happen, but I hear there is talk of one in Florida which would be totally awesome! :)

"Arrange day-of transportation for you, your wedding party, and guests (as needed)." They can walk, I can't get my dress dirty! KIDDING Yah, that's in progress too...

"Send out invitations at the three-month mark. Be sure to add extra postage for overseas guests." And for the rising cost of stamps...is it bad that ours aren't going out until like...5 weeks? Save the dates are going out at 7 weeks...that's cutting it close...I know....

Surprisingly, that's it. But then when we get to the 6 week mark, there's a ton more to do...but I'll spare that for another blog entry. In the midst of all this planning, we are both working nonstop, recovering from illnesses, and I'm auditioning for the Harborlites Chorus and hoping to make it in before the drop-dead date to be able to go to Denver! Oh boy! Lots to do!
